Cookies for Santa Blog Hop

There are 12 talented crafters here today to share w/ you their favorite Christmas cookies!!! If you arrived here from Lisa, you are in the right place.  If not you will want to go to her blog so you don't miss a thing!  I will have the entire line up at the end of my post so you don't get lost!!
Now for my cookies!!!  I love, love chocolate and mint!!  These cookies are the perfect combination and they are moist and chewy!!  The best part is they are fast and easy!!

I created these cookies adapting a couple of different recipes from Your Cup of Cake!  If you've never visited Lizzy's site before you have to check it out!!
Here is the quick and easy recipe.
 
Preheat oven to 350.
Cookie:
1 box of Pillsbury Devils food cake Mix
2 large eggs
1/3 C. vegetable Oil.
 
Mix these 3 ingredients well.  Batter will be very thick. 
I formed the dough into balls about the size of golf balls, placed on a cookie sheet and just pressed down.  This is important, otherwise the cookies will tend to stay thick.
Bake for 7-9 minutes.  The cookies may appear to be a little undercooked when you take them out of the oven...but that is fine...don't overcook them.  they will stiffin up as they begin to cool.  You want these cookies to be soft and chewy!!
 
Frosting Layer:
1/2 cup softened butter
1-2 cups confections sugar
Peppermint extract
green food coloring
Milk as needed to thin
 
I'm very terrible at measuring when making frosting as it never come out the same!!...but I did start with a 1/2 cup softened butter and then just continued to add the confectioners sugar until I felt it was the consistency I wanted..then I added the extract and a little milk.  Add green food coloring until you achieve the color you are looking for.
 
Melted candy coating layer
For this layer I melted some Wilton Candy Cane flavor Candy melts until it was a spreadable consistency. Spread thin layer over the frosting layer.
Sprinkle  with some Andes Candies Peppermint Crunch baking chips.
Pour yourself a glass of milk and enjoy!!!

  10. I think this is adorable!!! I want cookies soooooo badly but the diet will not allow it....but if I could I'd totally be making some like these!!! Great job showcasing the Simply Sheer Ribbons! They look fab on there!!!
